Make a quick and delicious Middle Eastern dish using canned fava beans found in most grocery stores.
Ingredients:
  • 1 tomato, chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon water, if needed
  • 1 (15 ounce) can fava beans, drained
  • 1 tablespoon water
  • 1 tablespoon ground cumin
  • 1.5 teaspoons salt
  • 1.5 teaspoons ground black pepper
  • 1 teaspoon ground red pepper
  • 2 tablespoons olive oil
  • 2 tablespoons finely chopped parsley
Instructions:
  • Heat vegetable oil in a skillet over medium heat. Sauté onion for 2 minutes. Add chopped tomato and tomato paste; cook until tomatoes are soft, about 4 minutes. Add 1 teaspoon water, if needed.
  • In a skillet, turn fava beans into a creamy paste. Stir in 1 tablespoon water, cumin, salt, black pepper, and ground red pepper until well mixed. Heat for 1 minute. Take off heat and let it sit for 1 minute, then fold in olive oil and parsley.
