Easy no-cook Mexican mini tacos ready in 15 minutes, perfect for a crowd.
Ingredients:
  • 1/4 cup mayonnaise or salad dressing
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cinnamon
  • 1 teaspoon honey
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/3 cup thinly sliced celery
  • 1 package (3.8 ounces) miniature taco shells (24 shells)
  • 1/3 cup dried cranberries
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • Combine the mayonnaise, cumin, salt, cinnamon, and honey in a medium bowl. Add the beans and celery, then stir until well mixed.
  • Fill each taco shell with a generous 1 1/2 tablespoons of the mixture. Top with a sprinkle of cranberries and fresh cilantro.
