Feta and Turkey Stuffed Green Peppers

Flavorful ground turkey seasoned with aromatic herbs mixed with zesty barbecue sauce and rice stuffed inside green bell peppers for a delicious twist on a classic dish.
Ingredients:
  • 6 green peppers, tops and seeds removed
  • 3 tablespoons olive oil
  • 1 pound ground turkey
  • 1 white onion, chopped
  • 1.5 teaspoons salt
  • 1.5 teaspoons ground black pepper
  • 1 (15.5 ounce) can sweet corn, drained
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1.5 teaspoons ground thyme
  • 1.5 teaspoons dried rosemary
  • 1 tablespoon crushed fennel seeds
  • 1 cup water
  • 0.33333334326744 cup white rice
  • 0.25 cup sweet barbeque sauce
  • 1 cup crumbled feta cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and elegantly place the bell peppers in a casserole dish, ensuring their cavities are facing upwards.
  • Start by heating olive oil in a skillet over medium heat. Cook turkey until fully browned, approximately 5 minutes. Next, add onion, salt, and pepper, and cook for an additional 3 minutes. Incorporate corn, tomatoes, thyme, rosemary, and fennel into the turkey, stirring well. Pour in water, add rice, and bring to a boil. Cover, reduce heat to low, and simmer until rice is tender, about 15 minutes. Lastly, stir in barbeque sauce before removing the skillet from the heat.
  • Fill each bell pepper one-third full with the turkey mixture, sprinkle half of the feta cheese on top, then fill them to the top with the remaining turkey mixture and finish with the rest of the feta cheese.
  • Roast in the preheated oven until the peppers are tender, approximately 45 minutes.
