Transform roasted garlic into a fragrant spread, mix with creamy cheese and vibrant red pepper for a delicious dip.
Ingredients:
  • 1 medium garlic bulb
  • 1 tablespoon olive oil
  • 8 oz. feta cheese, crumbled (2 cups)
  • 1 (8-oz.) pkg. cream cheese, softened
  • 2 tablespoons finely chopped roasted red bell pepper (from a jar)
  • 2 whole roasted red bell peppers (from a jar)
Instructions:
  • Preheat oven to 350°F. Trim 1/8-inch off the top of the garlic bulb and dispose of it. Put the garlic bulb on a foil sheet. Drizzle with oil, then wrap it in foil. Bake at 350°F for 30 to 45 minutes until the garlic is soft. Let it cool for 5 minutes, then unwrap and cool for another 30 minutes until it's easy to handle.
  • Using a small spoon, transfer the soft garlic pulp into the food processor bowl with the metal blade, discarding the skins. Add feta and cream cheese, then process for about 5 minutes until light and fluffy. Lastly, gently fold in the chopped roasted pepper.
  • Shape the cheese mixture into a 4-inch square, 1 1/2 inches thick on a sheet of plastic wrap. Wrap it up and refrigerate for at least 4 hours or overnight.
  • Unwrap the cheese and place it on a serving plate. Gently smooth the top and sides with a small metal spatula. Cut eight 4-inch strips from whole roasted peppers. Wrap the cheese square from the center down the sides with 4 strips of roasted pepper to create a ribbon effect. Use 2 strips to form loops resembling a bow and the remaining 2 strips for ties that drape over the edge of the cheese. Serve with assorted crackers or toasted baguette slices.
