Irresistible puff pastry bites with feta, spinach, and Parmesan - a must-have for elegant gatherings.
Ingredients:
  • nonstick cooking spray
  • 1 sheet frozen puff pastry, thawed in the refrigerator
  • 0.75 cup mayonnaise
  • 1 (6 ounce) container crumbled feta cheese
  • 0.5 cup freshly grated Parmesan cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 2 cloves garlic, minced
  • 0.25 teaspoon ground black pepper
Instructions:
  • Preheat the oven to 375 degrees F (180 degrees C) and generously coat the cups of a 24-cup mini muffin pan (or 2 12-cup mini muffin pans) with nonstick cooking spray.
  • On a lightly floured surface, elegantly shape the cold, thawed puff pastry into a beautiful rectangle using a rolling pin. Slice it into 24 charming 2 1/2-inch squares with a pizza cutter. Gently fit each square into the mini muffin pan cups and delicately prick them with a fork.
  • Combine the mayonnaise, feta cheese, Parmesan cheese, spinach, garlic, and pepper in a bowl and blend until well mixed.
  • Carefully distribute the feta-spinach mixture into the cups, ensuring not to overfill.
  • Bake in the hot oven until the pastry is puffed up and the corners are golden brown, about 15-16 minutes.
  • Allow the bites to cool in the pan on a wire rack for 5 minutes, then transfer to a serving dish.
