Fig “Newt” Bars

Elevate your dessert spread with scrumptious fig-filled bars using Betty Crocker® cookie mix - perfect for Halloween!
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup cold butter
  • 2 3/4 cups dried Calimyrna figs, stems removed
  • 3/4 cup warm water
  • 1/4 cup real maple syrup or honey
  • 1 teaspoon grated lemon peel
  • 1/2 cup chopped walnuts
Instructions:
  • Preheat the oven to 350°F and grease a 13x9-inch baking pan. In a large bowl, empty the cookie mix. Use a pastry blender or two knives to cut in the butter until the mixture resembles coarse crumbs. Set aside 1 1/2 cups of the crumb mixture for the topping. Press the rest of the mixture onto the bottom of the pan. Bake for 10 minutes, then let it cool.
  • In a food processor, combine figs and warm water until a smooth paste forms. Then, add syrup and lemon peel and blend until smooth. Spread the fig mixture evenly over the partially baked crust.
  • Combine the remaining crumb mixture with walnuts in a small bowl, then sprinkle over the fig mixture.
  • Bake for 20 to 25 minutes or until a light golden brown. Allow to cool completely on a cooling rack for approximately 30 minutes. Cut into 6 rows by 4 rows.
