Savor a vibrant Spinach Salad with grilled flat iron steak, peppers, and mushrooms.
Ingredients:
  • 1 (2 pound) flat iron steak
  • 1 large red onion, thinly sliced
  • 0.5 cup Italian salad dressing
  • 3 large red bell peppers, cut into 1/2 inch strips
  • 2 portobello mushrooms, sliced
  • 0.5 cup red wine
  • 4 cups baby spinach leaves
  • 0.5 cup crumbled blue cheese
Instructions:
  • Get your outdoor grill ready by preheating it to medium-high heat, then give the grate a light coating of oil.
  • Season both sides of the flat iron steak generously with a pinch of salt and a dash of pepper. Grill until your preferred level of doneness, approximately 5 minutes per side for medium-rare. Allow the steak to rest in a cozy spot before serving.
  • In a large skillet over medium-high heat, sauté onion in olive oil until it softens, for about 4 minutes. Add Italian salad dressing and bring to a boil. Stir in red peppers and mushrooms. Lower the heat to medium and cook until the peppers are tender, for about 5 minutes. Using a slotted spoon, transfer the vegetables from the skillet and set them aside.
  • Boost the heat to medium-high and pour red wine into the skillet. Allow the salad dressing and wine to simmer until it thickens into a syrupy sauce, approximately 5 minutes.
  • As you wait, arrange spinach leaves on serving plates. Slice steak thinly against the grain. Top spinach with warm cooked vegetables, sliced steak, reduced red wine sauce, and a sprinkle of blue cheese.
