Indulge in fudgy gluten-free chocolate brownies, no flour needed.
Ingredients:
  • 1 teaspoon unsalted butter
  • 1.5 teaspoons unsweetened cocoa powder
  • 2 (4 ounce) bars dark chocolate (60 to 65% cocoa), chopped
  • 0.25 cup unsalted butter, diced
  • 0.25 cup coconut oil
  • 5 eggs
  • 0.66666668653488 cup white sugar
  • 0.25 teaspoon instant espresso powder
  • 1 pinch salt
  • 1 tablespoon confectioners' sugar for dusting
Instructions:
  • Preheat your oven to 325°F (165°C).
  • Prepare the 8-inch baking pan by greasing it with 1 teaspoon of butter. Sprinkle cocoa powder into the pan and swirl to coat evenly. Invert the pan over the sink and tap lightly to remove any excess cocoa. Nestle the prepared pan into a larger baking pan.
  • Melt chocolate, 1/4 cup butter, and coconut oil in a double boiler over simmering water. Stir occasionally and scrape the sides with a rubber spatula to prevent burning, until chocolate is nearly melted, about 4 to 5 minutes. then remove from heat.
  • Simmer 4 cups of water in the saucepan used for the double boiler.
  • In a large bowl, combine whisked eggs and sugar. In a separate bowl, dissolve espresso in vanilla extract. Pour the vanilla mixture into the eggs, add salt, and stir in cooled chocolate mixture.
  • Transfer the luscious chocolate batter into the 8-inch pan. Then, carefully add simmering water to the larger baking pan to create a gentle hot water bath.
  • Bake brownies in a water bath in the preheated oven for 52-55 minutes until a toothpick inserted into the center comes out mostly clean with a few crumbs attached.
  • Carefully lift the 8-inch pan from the hot water bath and invert it onto a wire rack lined with parchment paper. Let it cool for 30 minutes, then refrigerate until firm for about 3 hours. Cut into squares and dust with confectioners' sugar before serving.
