French Onion Soup VII

Caramelized onions in butter, simmered with broth and white wine for an easy and flavorful onion soup.
Ingredients:
  • 8 onions, sliced
  • 1 quart vegetable broth
  • 1.5 cups white wine
  • salt and pepper to taste
  • 6 slices baguette
  • 2 cups shredded mozzarella cheese
Instructions:
  • In a large pot over medium heat, melt butter until sizzling. Caramelize onions until deeply browned for about 20 minutes. Add broth and wine, then deglaze the pot with a wooden spoon. Season generously with salt and pepper. Simmer until warmed through.
  • Preheat the broiler. Fill heatproof serving bowls with soup. Add a slice of bread and sprinkle cheese on top. Broil until cheese is melted and golden brown.
