French raisin toast with ice-cream and caramel sauce

Elevate raisin bread to decadent French toast, topped with caramel sauce, raspberries, and ice cream.
Ingredients:
  • 1/3 (10cm-long piece) unsliced fruit loaf
  • 2 eggs, lightly whisked
  • 185ml (3/4 cup) milk
  • 80.00g butter
  • Vanilla ice-cream, to serve
  • Fresh raspberries, to serve
  • Icing sugar, to dust
  • 185ml (3/4 cup) thickened cream
  • 100g (1/2 cup, firmly packed) brown sugar
Instructions:
  • Cut the bread into four 2.5cm-thick slices using a large serrated knife, then combine the egg and milk in a large bowl.
  • In a saucepan, mix together cream, butter, and sugar over low heat until the butter melts. Increase heat to medium-high and bring it to a gentle boil. Cook and stir constantly for 5 minutes until the sauce thickens.
  • Melt half of the butter in a frying pan over medium-high heat until it starts to foam. Dip each bread slice in the egg mixture, one at a time, then cook in the pan for 1-2 minutes per side until golden brown. Transfer to plates and repeat the process with the rest of the butter, bread, and egg mixture.
  • Drizzle caramel sauce over the dish and garnish with fresh raspberries and a scoop of ice cream. Sprinkle with a dusting of icing sugar and enjoy right away.
