Crispy fried cauliflower in fragrant cumin batter, inspired by Egyptian flavors.
Ingredients:
  • 2 teaspoons ground cumin
  • 1 head cauliflower, cut into florets
  • 1 cup all-purpose flour
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 tablespoon tomato paste
  • 0.25 cup milk, or as needed
  • 2 cups vegetable oil, or as needed
Instructions:
  • Fill a large pot with lightly salted water, bring to a rolling boil, then add 2 teaspoons of cumin. Cook cauliflower florets in batches for 1 to 2 minutes until crisp-tender. Remove using a slotted spoon and cool on a plate.
  • In a blender or food processor, combine flour, egg, garlic, 1 teaspoon cumin, tomato paste, and salt. Blend until the batter is smooth, and add milk to thin if needed.
  • Bring oil in a deep skillet to a perfect 350 degrees F (175 degrees C).
  • Coat cauliflower florets in batter, then fry in hot oil in batches until golden and crispy, 6 to 8 minutes. Drain on paper towel-lined plate after removing with slotted spoon.
