Delicious fried razor clams coated in crispy crackers and served with zesty cocktail sauce for a spicy kick. A western Washington delight!
Ingredients:
  • 0.5 cup oil for frying, or as needed
  • 1 (4 ounce) packet saltine crackers, finely crushed
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon ground cayenne pepper
  • 0.25 teaspoon paprika
  • 0.25 teaspoon garlic powder
  • 2 eggs, beaten
  • 4 large razor clams, cleaned and dried
Instructions:
  • Warm the oil in a spacious skillet set over medium heat.
  • Combine crushed crackers with black pepper, cayenne pepper, paprika, and garlic powder in a bowl. In a separate bowl, place eggs. Dip clams first into eggs, then into the cracker mixture to coat evenly.
  • Fry clams until they're golden brown in hot oil, being careful not to overcook them.
