Indulge in the irresistible aroma and flavor of homemade bread fresh from the oven.
Ingredients:
  • 300g mixed dried fruit
  • 450ml hot Earl Grey tea
  • 90g brown sugar
  • 1 lemon, zested
  • 450.00 gm self-raising flour
  • 2.50 gm mixed spice
  • 1 large egg
Instructions:
  • Combine the dried fruit with freshly brewed hot tea in a bowl, cover it with plastic wrap, and let it sit at room temperature overnight to infuse all the flavors.
  • Preheat the oven to 180°C and generously grease a 10 x 25cm loaf pan.
  • Strain the fruit, saving the juice, and mix with the rest of the ingredients. Slowly incorporate the saved juice, stirring until the batter has a smooth, thick consistency. Transfer to the pan and bake for 45-50 minutes.
  • While waiting, prepare a sugar syrup by combining 1/2 cup sugar and 1/2 cup water in a pan over low heat, stirring until the sugar is fully dissolved. Let it simmer for 10-15 minutes. Brush the warm fruit loaf with the syrup.
  • Allow it to cool on a wire rack, then slice and enjoy with butter.
