Irresistible quick and crunchy dessert loved by all ages.
Ingredients:
  • 300g (2 cups) self-raising flour
  • 40.00 gm caster sugar
  • 2 eggs
  • 4.40 gm vanilla essence
  • Vegetable oil, to deep-fry
  • Icing sugar, to dust
  • Ice cream, to serve
  • Caramel sauce, to serve
Instructions:
  • Sift flour, sugar, and a pinch of salt into a large bowl, then create a well in the center. Whisk milk, eggs, and vanilla essence in a jug, and gradually incorporate into the well until combined.
  • Fill a 20cm saucepan halfway with oil and heat to 180C over medium-high heat. Cover the opening of a funnel or piping bag with a 1cm-nozzle using your finger, then pour in 1/2 cup of the batter. Slowly drizzle the batter into the hot oil to create a lacy pattern. Cook for 1 minute on each side or until golden brown. Remove and drain on paper towel.
  • Make 6 cakes, dust with icing sugar, and serve with ice-cream and caramel sauce.
