Garlic Angel Hair Shrimp

Family-friendly garlic shrimp pasta with asparagus and tomatoes.
Ingredients:
  • 0.5 (16 ounce) package angel hair pasta
  • 0.25 cup butter, divided
  • 1 (16 ounce) package frozen peeled-and-deveined shrimp
  • 0.5 cup diced onion
  • 2 teaspoons minced garlic
  • 0.75 cup diced tomatoes
  • 1 bunch fresh asparagus spears, trimmed and cut into 1-inch pieces
  • 0.25 cup grated Parmesan cheese, or to taste
  • 4 wedges lemon
Instructions:
  • 1. Boil a pot of salted water. Then, cook the angel hair pasta in the boiling water, stirring occasionally, until al dente, for about 4 to 5 minutes. Reserve 1 cup of the cooking water before draining.
  • Heat 1 tablespoon of butter in a large skillet over high heat. Cook shrimp in the hot butter until no longer pink, about 5 minutes. Using a slotted spoon, transfer shrimp to a bowl, leaving the liquid in the skillet.
  • Lower the heat to medium-high. Sauté onion and garlic in the flavorful liquid in the skillet until onions are translucent, about 5 to 7 minutes. Add tomatoes to the onion mixture and cook until soft, about 5 minutes.
  • Combine asparagus with the tomato mixture and incorporate the reserved pasta water. Simmer until asparagus is tender, for about 5 minutes. Add shrimp and angel hair pasta, then cook until shrimp is opaque, for 2 to 3 minutes. Season with salt, top with Parmesan cheese and lemon wedges to serve.
