Whip up a gourmet side of garlic and herb skillet potatoes in 15 minutes for a quick and elegant dish.
Ingredients:
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 4 russet potatoes, peeled and thinly sliced
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh oregano
  • 0.25 teaspoon paprika
  • salt and pepper to taste
  • 1.5 tablespoons minced garlic
  • 0.125 teaspoon cayenne pepper
Instructions:
  • In a large skillet over medium heat, melt butter with olive oil. Place potato slices in a single layer on the bottom and let them cook undisturbed for 5 minutes until they start to brown.
  • Season potato slices with a fragrant mix of thyme, parsley, rosemary, oregano, and paprika. Cook for 5 minutes until tender, then turn off the heat. Sprinkle with garlic and cayenne, and toss gently until the garlic softens, about 1 minute.
