Chive-infused creamy comfort potatoes.
Ingredients:
  • 6 medium Yukon Gold or russet potatoes (2 pounds)
  • 1 garlic bulb
  • 2 tablespoons olive or vegetable oil
  • 1 teaspoon chopped fresh oregano leaves or 1/4 teaspoon dried oregano leaves
  • 1/2 teaspoon salt
  • 1/3 to 1/2 cup milk
  • 1/4 cup chopped fresh chives
Instructions:
  • Preheat oven to 375°F. Use a fork to pierce potatoes for even cooking. Slice off the top of the garlic bulb to expose the cloves, remove the outer skin, leaving cloves unpeeled, then wrap the bulb in aluminum foil. Roast both in the oven for about 1 hour until the potatoes are tender.
  • Warm the oil and oregano on medium heat for 2 to 3 minutes until the oregano becomes aromatic; then, take it off the heat.
  • Peel garlic and let it cool. Halve potatoes and transfer to a large bowl. Set aside skins for later use. Squeeze garlic cloves into potatoes, discarding skins. Add oil mixture and salt to potatoes.
  • Mash potatoes until perfectly smooth, gradually adding small amounts of milk to achieve desired fluffy texture based on potato variety. Beat vigorously until light and fluffy, then gently fold in chives.
