Easy smashed garlic potatoes baked to perfection, ideal for any occasion.
Ingredients:
  • 5 pounds small red potatoes
  • 0.5 cup olive oil, or more as needed
  • 8 large cloves garlic, minced
  • 1.5 teaspoons salt
  • 0.75 teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley
Instructions:
  • In a very large pot, simmer potatoes in salted water until tender for about 40 minutes. Drain.
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Place the potatoes closely together in a 9x13-inch baking dish. Use a fork to press each potato about 1 inch deep in the center until the inner flesh is exposed.
  • Combine 1/2 cup of olive oil with garlic and salt, whisking until well blended. Pour the mixture over the potatoes.
  • Roast in the preheated oven, brushing with the oil mixture every so often, until the potatoes are golden and crispy on top, approximately 1 hour and 10 minutes. Drizzle with more oil if needed for extra moisture.
  • Garnish with fresh parsley and enjoy while it's hot.
