Crispy German potato pancakes with shredded potatoes and onion: a deliciously savory twist on traditional pancakes.
Ingredients:
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon pepper
  • 6 medium potatoes, peeled and shredded
  • 0.5 cup finely chopped onion
  • 0.25 cup vegetable oil
Instructions:
  • In a large bowl, whisk together eggs, flour, baking powder, salt, and pepper until smooth, then gently fold in potatoes and onion.
  • In a large skillet over medium heat, heat oil. Spoon heaping tablespoonfuls of potato mixture into the hot oil in batches. Flatten gently and cook until golden and crispy, around 3 minutes per side. Place on a paper towel-lined plate to absorb excess oil. Repeat with the rest of the potato mixture.
