Gingerbread apple pie

Delicious apple pie with sweet filling and spiced gingerbread crust, irresistible and healthier option for dessert.
Ingredients:
  • 80g (1/2 cup) wholemeal plain flour
  • 300g (2 cups) white spelt flour
  • 0.63 gm bicarbonate of soda
  • 60g (1/4 cup) muscovado sugar
  • 15.00 gm ground ginger
  • 1/2 tsp ground cloves
  • 100g solidified coconut oil
  • 1 egg
  • 42.00 gm fresh lemon juice
  • 1 gala apple, cored, sliced
  • 2 x 170g vanilla yoghurt, to serve
  • 100g light sour cream, to serve
  • 1.6kg gala apples, cored, cut into eighths
  • 57.20 gm honey, plus extra, to drizzle
  • 1 cinnamon stick
  • 4 slices fresh ginger
Instructions:
  • Place all ingredients along with a 60ml (1/4 cup) of water in a large saucepan. Cover and simmer, stirring occasionally, until the apples are just tender, for about 15-20 minutes. Remove from heat and let it cool while covered.
  • Preheat your oven to 190C/170C fan forced and place a baking tray inside. Prepare a 20cm springform pan by spraying the base with oil, lining it with baking paper (leaving a 4cm overhang), securing the base back in the pan, this time with the paper side up, and greasing the sides.
  • Blend the flours, bicarbonate of soda, sugar, ginger, cloves, and oil in a food processor until they form fine crumbs. Then, add the combined egg, juice, and 2 tablespoons of water. Process for 1-2 minutes, or until the mixture just comes together.
  • Knead dough on a floured surface until smooth. Set aside a third of the dough. Roll out the rest on floured baking paper into a 33cm disc. Line the pan with the dough, pressing it into the sides. Trim any excess dough.
  • Fill a pie shell with apple mixture, omitting the cinnamon and ginger. Roll out the reserved dough on floured baking paper into a disc large enough to cover the pie. Gently place it over the apple mixture, trim any excess dough, and crimp the edges. Make 3 slits on the top. Place the pie on a hot tray and bake for 40 minutes.
  • Arrange sliced apple on top of the pie, then bake for 30 minutes. Allow to rest for 10 minutes before drizzling with honey. Serve with a dollop of Quark mixed with sour cream.
