Gingered Rice and Beef

Create a tasty dinner in just 30 minutes using fried rice mix.
Ingredients:
  • 1 lb extra-lean (at least 90%) ground beef
  • 1 tablespoon grated gingerroot
  • 1 box (6.2 oz) fried rice-flavor rice and vermicelli mix (with seasoning packet)
  • 2 cups water
  • 1 medium red bell pepper, coarsely chopped (1 cup)
  • 2 cups frozen sugar snap peas (from 12 oz bag)
Instructions:
  • In a large nonstick skillet over medium-high heat, sauté the ground beef and gingerroot until the beef is fully cooked, remembering to stir occasionally. Drain any excess fat.
  • Combine the rice and vermicelli with the seasoning packet contents and stir well for 2 minutes. Pour in the water and bring to a boil, then lower the heat, cover, and simmer for 15 minutes, stirring occasionally.
  • Mix in vibrant bell pepper and crisp sugar snap peas, cover, and simmer for 5 to 10 minutes until the vegetables are tender, giving it an occasional gentle stir.
