Spiced gluten-free oatmeal chocolate chip cookies with rolled oats and warm spices.
Ingredients:
  • 0.5 cup margarine
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 2 eggs, well beaten
  • 1.25 cups rice flour
  • 1 tablespoon xanthan gum
  • 1 teaspoon gluten-free baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground allspice
  • 0.25 teaspoon salt
  • 3 cups gluten-free rolled oats
  • 0.5 cup gluten-free chocolate chips
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously grease your baking sheets.
  • In a large saucepan over medium heat, melt margarine until smooth. Remove from heat and stir in white sugar and brown sugar. Let mixture cool to room temperature for about 5 minutes.
  • Whisk eggs into creamy butter mixture until velvety. Mix in rice flour, xanthan gum, baking powder, cinnamon, baking soda, ginger, nutmeg, allspice, and salt. Fold in oats until dough is dense and fully mixed. Gently blend in chocolate chips. Spoon dough onto baking sheet in tablespoon portions.
  • Bake in the preheated oven for 7 to 9 minutes until golden and tender.
