Goat cheese and sun-dried tomato stuffed chicken thighs, rolled and served in sage brown butter sauce.
Ingredients:
  • 4 ounces goat cheese with garlic and herbs
  • 0.25 cup chopped sun-dried tomatoes with herbs (such as California Sun-Dry®)
  • 0.25 cup flour
  • 1.5 teaspoons salt
  • 0.5 teaspoon ground black pepper
  • 1.5 pounds boneless, skinless chicken thighs
  • 4 tablespoons butter, divided
  • 0.25 cup chopped fresh sage
  • 0.5 cup chicken broth
  • 0.5 cup white wine
  • lemon, juiced
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Mix tangy goat cheese with flavorful sun-dried tomatoes in one bowl. In a separate bowl, blend flour, salt, and pepper together.
  • Begin by placing the chicken thighs on a cutting board, covering them with plastic wrap, and gently pounding them with a meat mallet to flatten. Then evenly spread the goat cheese mixture down the center of each thigh, roll the meat around the filling, and secure with toothpicks or kitchen twine.
  • Coat each chicken roll with the flour mixture, gently shake off any extra, and transfer to a plate.
  • In a skillet over medium-high heat, melt 2 tablespoons of butter with olive oil. Sear chicken until golden brown on both sides, about 2 minutes each. Then, transfer the chicken to an oven-safe dish.
  • Roast in the hot oven until the chicken is cooked through and the juices run clear, approximately 25 minutes. Use an instant-read thermometer to ensure it reaches a minimum of 165 degrees F (74 degrees C) in the center.
  • Melt the 2 tablespoons of butter until bubbly and brown in a skillet over medium heat. Add the sage and swirl until fragrant. Pour in the broth, wine, and lemon juice. Simmer briefly, then reduce heat to low.
  • Return the chicken to the skillet and cook in the flavorful sauce for approximately 2 minutes, ensuring it is well coated. Present beautifully on plates and generously spoon the delicious sauce over the top.
