Irresistibly delicious and fluffy nutty pancakes.
Ingredients:
  • 1.5 cups old-fashioned oatmeal
  • 1.5 cups whole wheat flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1.5 cups buttermilk
  • 1 cup milk
  • 0.25 cup vegetable oil
  • 0.33333334326744 cup sugar
  • 3 tablespoons chopped walnuts
Instructions:
  • Blend the oats in a food processor until finely ground. Mix the ground oats with whole wheat flour, baking soda, baking powder, and salt in a large bowl.
  • In a separate bowl, use an electric mixer to blend buttermilk, milk, oil, egg, and sugar until smooth. Quickly incorporate the wet ingredients into the dry mixture. Add nuts, if preferred.
  • Preheat a skillet or griddle over medium heat with a light layer of oil. Pour 1/3 cup of batter onto the skillet and cook the pancakes until golden brown, 2 to 4 minutes per side.
