Grasshopper Trifle

Decadent milk chocolate trifle with minty marshmallow filling and crushed candies.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Milk Chocolate Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1/2 cup water
  • 1 envelope unflavored gelatin
  • 1 jar (7.5 oz) marshmallow creme
  • 1/2 cup crème de menthe
  • 2 cups whipping cream
  • 2 tablespoons sugar
  • 1 package (4.67 oz) thin rectangular crème de menthe chocolate candies, chopped
  • 1 package (8 oz) Oreo mini chocolate creme sandwich cookies, crushed
  • Additional broken thin rectangular crème de menthe chocolate candies
  • Fresh mint leaves
Instructions:
  • Preheat your oven to 350°F. Grease a 13x9-inch pan with shortening or cooking spray. Prepare and bake the cake mix according to the instructions on the box for a 13x9-inch pan, using water, oil, and eggs. Allow the cake to cool completely for about 30 minutes before proceeding.
  • In a 1-quart saucepan, pour water and sprinkle gelatin over it. Let the mixture stand for 1 minute to soften. Heat gently over low heat, stirring until gelatin is fully dissolved.
  • Combine fluffy marshmallow creme, crème de menthe, and gelatin in a medium bowl, whisking until smooth. Chill in the refrigerator for 10 to 15 minutes.
  • In a separate medium bowl, use an electric mixer to whip the cream and sugar until soft peaks form. Reserve 1 cup of whipped cream for later use.
  • Incorporate the chilled mint mixture delicately into the whipped cream.
  • Cut the cooled cake into 1-inch cubes. Line the bottom of a 10-cup glass trifle bowl with the cake cubes. Spread half of the mint mixture evenly over the cake cubes. Sprinkle chopped candies on top. Add another layer of cake cubes and the remaining mint mixture. Finish with crushed cookies and the reserved whipped cream. Cover and refrigerate for at least 2 hours, but no longer than 24 hours.
  • Sprinkle extra candies and fresh mint on top right before serving. Keep refrigerated with a cover.
