Prepare a summery Greek salad with fresh, vibrant produce.
Ingredients:
  • 36.40 gm extra-virgin olive oil
  • 20.00 ml red wine vinegar
  • 1 baby cos lettuce
  • 1/4 small red onion, thinly sliced
  • 2 medium tomatoes, roughly chopped
  • 1 Lebanese cucumber, quartered lengthways, chopped
  • 62.50 ml pitted kalamata olives, roughly chopped
  • 60g feta, cubed
  • 62.50 ml roughly chopped fresh basil leaves
Instructions:
  • Combine oil, vinegar, salt, and pepper in a screw-top jar. Seal tightly and shake well.
  • Prepare the lettuce by removing the outer leaves and core, then separarte the leaves. Wash the leaves and gently pat them dry. Give the lettuce a rough chop. Combine the lettuce, onion, tomato, cucumber, olives, feta, and basil in a bowl. Drizzle dressing over the salad and toss everything together. Serve and enjoy!
