Try this quick and flavorful Greek-style baked cod dinner for two in 40 minutes!
Ingredients:
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped (1/4 cup)
  • 1 clove garlic, finely chopped
  • 1 teaspoon grated lemon peel
  • 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried thyme leaves
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 3/4 lb cod or other mild flavor, medium-firm fish fillets, cut into 2 serving pieces
  • 2 tablespoons chopped ripe olives
  • 2 tablespoons crumbled reduced-fat feta cheese
  • 2 tablespoons plain croutons
Instructions:
  • Preheat oven to 400°F. Heat oil in a 10-inch skillet over medium-high heat. Sauté onion and garlic for 2 to 3 minutes, stirring often, until onion is soft.
  • Mix in the zest of a lemon, fragrant basil, earthy thyme, and juicy tomatoes. Cook on medium-high heat for approximately 6 minutes, stirring occasionally, until the mixture slightly thickens.
  • Spread half of the flavorful tomato mixture onto the bottom of an 8-inch square (2-quart) glass baking dish. Then, layer the fish over the tomato mixture. Pour the rest of the tomato mixture over the fish, and finish by sprinkling olives, cheese, and croutons over the top.
  • Bake the fish without covering for 15 to 20 minutes or until it flakes easily with a fork.
