Cozy up with this creamy green bean casserole featuring tender chicken and savory mushrooms - a delicious way to repurpose holiday leftovers.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 small onion, chopped
  • 2 cups chopped mushrooms
  • 0.5 cup whiskey
  • 0.66666668653488 cup sour cream
  • 0.5 cup vegetable broth
  • 2 tablespoons all-purpose flour
  • 1 whole roasted chicken, dark meat removed from bones and shredded
  • 4 cups frozen cut green beans
  • salt and ground black pepper to taste
  • 1.5 cups French-fried onion rings
  • 0.5 (12 ounce) jar pork gravy
Instructions:
  • Preheat oven to 400°F (200°C) to get it nice and hot for cooking.
  • In a large oven-proof skillet, heat oil over medium-high heat. Sauté onion until soft and translucent, about 5 minutes. Add mushrooms and cook for 1 to 2 minutes. Carefully pour whiskey into the skillet and simmer over medium heat until cooked down, about 5 minutes.
  • Combine sour cream, vegetable broth, and flour in a bowl, stirring until smooth. Pour mixture into the skillet and bring to a boil. Reduce heat and simmer for about 5 minutes until the sauce thickens.
  • In a large bowl, gently mix chicken and green beans with the sauce until evenly coated. Season with salt and pepper. Transfer everything back to the skillet and cover securely with a lid or aluminum foil.
  • Place in the preheated oven for 30 minutes until heated through. Then sprinkle onion rings on top and bake for an additional 15 minutes until crispy and golden brown. Finally, stir in the gravy while the casserole is hot.
