Elevate your holidays with a fresh green bean casserole featuring a homemade roux for unbeatable flavor.
Ingredients:
  • 2 pounds fresh green beans, trimmed and cut into 2-inch pieces
  • 0.5 cup unsalted butter, divided
  • 2 medium onions, diced
  • 1 (16 ounce) package sliced fresh mushrooms
  • 2 cloves garlic, minced
  • 0.33333334326744 cup all-purpose flour
  • sea salt and ground black pepper to taste
  • 3 cups milk
  • 1 (6 ounce) can crispy fried onions (such as Durkee®)
Instructions:
  • 1. Preheat the oven to 350 degrees F (175 degrees C) and prepare a large bowl with ice and cold water.
  • 1. Boil a large pot of lightly salted water. Add green beans and cook for about 6 minutes until crisp-tender. Drain in a colander, then immediately place in ice water to halt cooking. Finally, drain and transfer to a large bowl.
  • In a large skillet over medium-high heat, melt 3 tablespoons of butter. Saute onion until translucent, around 5 minutes. Add mushrooms and garlic and saute until mushrooms are cooked through, about 5 minutes. Mix everything with green beans.
  • Melt the remaining 5 tablespoons of butter in a 2-quart microwave-safe bowl in 30-second intervals on high power.
  • Whisk flour into melted butter until smooth. Stir in sea salt, pepper, and 1 cup of milk until combined. Microwave for 2 minutes. Gradually add remaining milk while whisking until smooth, microwaving for 2 minutes after each addition. The mixture should thicken gradually between each addition. Microwave a final 2 minutes after adding the last cup of milk, then whisk before serving.
  • Transfer the green bean mixture to a 9x13-inch baking pan. Mix in the thickened roux and season with salt and pepper to taste.
  • Bake in the preheated oven for 30 minutes until warm and bubbly. Sprinkle crispy fried onions on top and bake for an additional 5 minutes.
