Green bean salad with orange and mint

"Zesty orange-mint green beans: low GI, gluten-free side bursting with fresh flavors."
Ingredients:
  • 1kg green beans, trimmed
  • 2 oranges, peeled
  • 56.88 gm extra virgin olive oil
  • 2 red onions, thinly sliced
  • 30.00 ml balsamic vinegar
  • 16.00 gm brown sugar
  • 125.00 ml fresh mint leaves
  • 82.50 ml natural sliced almonds, toasted
Instructions:
  • Bring a large pot of salted water to a boil. Cook beans for 3 minutes until vibrant green and slightly tender. Drain and immediately cool under cold running water. Set aside.
  • Segment oranges into a bowl, squeezing to extract juice from membranes.
  • In a frying pan over medium-high heat, heat oil. Add onion and cook until golden, about 5 minutes. Transfer onion to a bowl. To the same pan, add vinegar, sugar, and orange juice. Stir and cook for 2 minutes until mixture starts to boil. Remove from heat.
  • Combine beans and orange with onion. Season with salt and pepper. Toss well. Transfer to a serving platter. Drizzle with the vinegar mixture. Top with mint and almonds. Serve.
