Sauté colorful green beans and sweet peppers with herbs and a splash of lemon for a vibrant dish.
Ingredients:
  • 1 bag (22 oz) frozen whole green beans
  • 1 tablespoon lemon juice
  • 2 teaspoons Dijon mustard
  • 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
  • 2 teaspoons chopped fresh or 3/4 teaspoon dried thyme leaves
  • 1 tablespoon olive or vegetable oil
  • 1 medium red bell pepper, cut into strips
  • 1 medium yellow bell pepper, cut into strips
  • 1/2 teaspoon salt
  • Freshly ground black pepper, if desired
Instructions:
  • Cook green beans in a 12-inch skillet on the Stove-Top according to the instructions on the bag. Drain beans and place them on a plate, covering them loosely to keep warm.
  • In a small bowl, combine lemon juice, mustard, basil, and thyme; set aside.
  • Drizzle oil into the skillet and heat over medium-high heat. Add bell peppers and cook for 6 to 8 minutes, stirring often, until just tender.
  • Combine green beans and lemon mixture with peppers, ensuring everything is well coated. Season with salt and cook for 2 to 3 minutes, stirring often. Serve with a generous sprinkling of freshly ground black pepper.
