Elevate your lunch with this elegant Italian side dish.
Ingredients:
  • 4 slices sourdough bread, roughly torn
  • 18.20 gm olive oil
  • 2 garlic cloves, roughly chopped
  • Grated zest of 1 lemon
  • 82.50 ml flat-leaf parsley
  • 400g baby green beans, topped
  • 30g unsalted butter
Instructions:
  • 1. Preheat the oven to 180°C. 2. Spread the bread on a baking tray, then generously drizzle with oil. 3. Bake for about 10 minutes, or until the bread turns golden and crispy. 4. Allow it to cool slightly, then combine it in a food processor with garlic, zest, and parsley until a coarse crumb mixture forms. 5. Season with your favorite herbs and spices before setting it aside.
  • Boil beans in salted water until crisp-tender for 2-3 minutes. Drain and cool in cold water. Return to pan, add butter, and toss until melted. Plate beans, top with pangrattato, and enjoy.
