Quick and delicious veggie-topped pizza.
Ingredients:
  • 2 bought wholemeal pizza bases (without tomato sauce)
  • 99.00 gm basil pesto
  • 2 garlic cloves, thinly sliced
  • 200g baby spinach
  • 2 bunches broccolini, stems sliced
  • 375.00 ml grated mozzarella
  • 200g cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 20.00 ml balsamic vinegar
Instructions:
  • Preheat oven to 240°C (220°C fan-forced).
  • Place the pizza bases on 2 trays. Spread pesto over the bases. Add garlic, 80g baby spinach, broccolini, and mozzarella on top. Bake for 10-12 minutes until the cheese is melted and the base is crisp.
  • In a large bowl, mix together the rest of the baby spinach, tomatoes, onion, and vinegar. Season to taste and toss until everything is coated. Serve the pizza alongside the salad.
