Tangy green tomato jelly enhanced with raspberries and jalapeno peppers elevates any grilled dish with a perfect blend of sweet and spicy flavors.
Ingredients:
  • 5 cups finely chopped green tomatoes
  • 4 cups white sugar
  • 2 cups frozen raspberries
  • 2 jalapeno peppers, finely chopped
  • 1 (6 ounce) package raspberry-flavored gelatin mix (such as Jell-O®)
Instructions:
  • In a saucepan, mingle green tomatoes, sugar, raspberries, and jalapeno peppers. Cook and stir until sugar dissolves and raspberries and tomatoes break down, approximately 15 minutes. Take the saucepan off the heat and mix in the gelatin until fully incorporated.
  • Carefully pour the tomato-raspberry mixture into a blender until it is half full. Secure the lid tightly and pulse a few times before blending until smooth in batches.
  • Boil jars and lids for 5 minutes. Fill hot jars with tomato-raspberry mixture, leaving 1/4-inch space at the top. Remove air bubbles by running a knife along the insides. Wipe rims clean with a damp paper towel. Seal jars with lids and rings.
  • Fill a large stockpot halfway with water and bring it to a boil. Using a holder, carefully lower the jars onto a rack placed inside the pot, ensuring a 2-inch space between them. Add more boiling water if needed to ensure jars are covered by at least 1 inch of water. Cover the pot, bring the water back to a rolling boil, and process for 10 minutes.
  • Transfer the jars from the stockpot to a cloth-covered or wood surface, spacing them several inches apart to cool. Press down on the top of each lid to confirm a tight seal. Store in a cool, dark place.
