Grilled asparagus with flavorful dressing - perfect for pairing with BBQ!
Ingredients:
  • 4 drained anchovy fillets, finely chopped
  • 1 egg yolk
  • 1 small garlic clove, crushed
  • 5.90 gm Dijon mustard
  • 125ml (1/2 cup) olive oil
  • 31.50 gm fresh lemon juice
  • 30.00 gm hot water
  • 2 bunches asparagus, woody ends trimmed
  • Olive oil, to grease
  • Shaved parmesan, to serve
  • Lemon wedges, to serve
Instructions:
  • Combine anchovy, egg yolk, garlic, and mustard in a food processor; blend until smooth. With the motor running, slowly pour in the oil until mixture is thick and pale. Add lemon juice and blend until smooth. Mix in hot water until combined. Season with salt and pepper, then transfer to a bowl.
  • Heat up a chargrill or barbecue to medium-high heat. Brush asparagus with oil and grill half of them for 2-3 minutes until tender crisp. Transfer to a serving platter and repeat with the rest of the asparagus.
  • Pour half of the caesar aïoli over the asparagus, sprinkle with parmesan and a pinch of pepper. Serve with the rest of the aïoli and lemon wedges on the side.
