Grilled Caesar Beef Appetizer Kabobs

Impress your friends with these delicious appetizers.
Ingredients:
  • 1 pound beef boneless sirloin steak, 3/4 to 1 inch thick, cut into 1-inch pieces
  • 1 medium yellow or green bell pepper, cut into 1-inch pieces
  • 1 cup 1-inch pieces pattypan or yellow summer squash
  • 1 1/2 cups whole mushrooms
  • 1 1/2 cups cherry tomatoes
  • 1/2 cup Caesar dressing
  • 1/4 teaspoon coarsely ground pepper
  • 30 wooden skewers (6 to 8 inches)
  • Romaine leaves
  • Additional Caesar dressing, if desired
  • Chopped fresh chives, if desired
Instructions:
  • In a large resealable bag, combine beef, bell pepper, squash, mushrooms, and tomatoes. Add 1/2 cup dressing and ground pepper, seal the bag, and give it a good shake to coat everything. Place in the refrigerator for 1-4 hours, flipping the bag occasionally. Soak skewers in water for about an hour to prevent burning.
  • Preheat your grill for direct heat. Take the beef and vegetables out of the marinade, and discard the marinade. Remove the skewers from the water, then place 1 or 2 pieces of beef on each skewer. Finish by adding a mushroom, squash, bell pepper piece, or tomato to the end of each skewer.
  • Grill the kabobs over medium heat, turning frequently, for 6 to 8 minutes until the beef is cooked to medium doneness.
  • Place the romaine lettuce on a beautiful serving platter. Arrange the kabobs on top of the lettuce. Serve with a side of extra dressing in a small bowl for dipping, and garnish with freshly chopped chives.
