Curry chicken grilled to perfection with savory sauce served over fragrant saffron rice.
Ingredients:
  • 0.33333334326744 cup reduced-sodium soy sauce
  • 2 tablespoons minced garlic
  • 2 tablespoons minced fresh ginger root
  • 2 tablespoons fresh lime juice
  • 2 teaspoons curry powder
  • 6 (5 ounce) skinless, boneless chicken breast halves
  • 1.25 cups low-sodium chicken broth
  • 1 teaspoon cornstarch
  • 1 teaspoon water
Instructions:
  • Combine soy sauce, minced garlic, fresh ginger, lime juice, and curry powder in a glass container. Add chicken and mix until well coated. Cover and chill in the fridge for 1 to 3 hours.
  • Preheat your grill to medium-high heat, oil the grate, and then transfer the chicken from the marinade to a small saucepan, keeping the marinade for later use.
  • Grill chicken until cooked through and juices run clear, about 4 to 6 minutes per side or until the internal temperature reaches 165 degrees F (74 degrees C). Allow the chicken to rest for 10 minutes before serving.
  • As the chicken cooks, blend cornstarch and water in a small bowl until smooth. Combine with the marinade, then stir in chicken broth. Simmer the sauce until slightly thickened, around 10 to 14 minutes. Pour the curry-soy sauce over the chicken before serving.
