Grilled English peas in pods, drizzled with olive oil and sea salt, perfect for snacking like edamame.
Ingredients:
  • Fresh English or shell peas, in their pods
  • Olive oil
  • Kosher salt
  • Balsamic vinegar (optional)
  • A few fresh mint leaves, thinly sliced (optional)
Instructions:
  • Preheat your grill to high heat.
  • In a bowl, add a generous handful of peas, drizzle with olive oil, sprinkle generously with kosher salt, and toss to coat evenly.
  • Arrange the peas on the hot grill to prevent them from falling through the grates. Grill for a few minutes on each side until charred and tender.
  • Transfer to a bowl and lightly drizzle with balsamic vinegar, then toss with fresh mint, if desired. Enjoy like edamame by popping the pod into your mouth and scraping out the peas against the savory, charred exterior of the pod. Discard the empty pods.
