Grilled Grapefruit Paloma Cocktail

Smoky grilled grapefruit and lime elevate these Paloma tequila cocktails for a refreshing summer twist.
Ingredients:
  • 2 limes
  • 1 red grapefruit, halved widthwise
  • 0.25 cup kosher salt
  • 1 cup ice cubes, or as needed
  • 4 fluid ounces tequila
  • 2 tablespoons simple syrup, or to taste
  • 4 fluid ounces club soda
Instructions:
  • Get your outdoor grill ready by preheating it to a delicious medium-high heat and giving the grate a light oiling.
  • Slice 1 lime half into 3 round wheels.
  • Place a generous amount of sugar in a shallow bowl. Coat lime halves, 2 lime wheels, and grapefruit thoroughly with the sugar by dipping them into the bowl.
  • Grill limes and grapefruit cut-side down until browned with grill marks, 5 to 10 minutes. Transfer to a rimmed baking sheet to cool.
  • Take the lime wheel and rub it over the rims of 2 highball glasses. Dip the rims into kosher salt. Proceed to fill the glasses with ice.
  • Squeeze grilled lime halves and grapefruit into a small pitcher. Add any juices from the baking sheet. Mix in tequila and simple syrup. Pour into glasses and finish with club soda. Garnish with grilled lime wheels.
