Try this quick and delectable grilled sponge cake with caramelized bananas and almonds.
Ingredients:
  • 12 slices Madeira Cake
  • 6 small lady finger bananas, halved lengthways
  • 160ml caramel sauce
  • 20.00 ml flaked natural almonds
Instructions:
  • Preheat the grill to medium heat. Line a baking tray with foil and arrange the cake slices on it. Grill for 1-2 minutes on each side until the cake is lightly toasted.
  • In a sizzling frying pan, melt half of the butter and add in half of the banana. Sear each side for 1-2 minutes until beautifully caramelized. Transfer to a plate. Repeat with the rest of the butter and banana. Finally, swirl in the caramel sauce in the pan and stir for 1 minute.
  • Assemble by placing the cake on serving plates, adding slices of banana on top, drizzling with sauce, and finishing with a sprinkle of almonds.
