Delicious grilled pineapple dessert served with homemade mint sugar and sweetened Greek yogurt - perfect ending to a BBQ night!
Ingredients:
  • 2 (16 ounce) cans pineapple slices, drained
  • 2 lemons, juiced
  • 4 tablespoons white sugar, divided, or more to taste
  • 1 tablespoon minced fresh ginger
  • 3 tablespoons fresh mint leaves
  • 1 (7 ounce) container Greek yogurt
Instructions:
  • In a shallow bowl, arrange the pineapple slices. In a cup, mix lemon juice, 2 tablespoons of sugar, and ginger. Pour the mixture over the pineapple, cover, and let it marinate for 2 hours.
  • In the food processor, blend the mint leaves with the 2 tablespoons of sugar until finely chopped. Make sure to drain the pineapple well, and don't forget to save the marinade for later use.
  • Preheat the outdoor grill until super hot and lightly oil the grate. Grill the pineapple until it's tender and warmed through, about 2 to 3 minutes per side.
  • Mix 3 to 4 tablespoons of the marinade into the Greek yogurt and adjust sweetness with extra sugar to taste. Top grilled pineapple with mint sugar and serve alongside the yogurt.
