Grilled Pork Tenderloin Sandwiches

Tangy mustard and sweet marmalade elevate this hearty sandwich.
Ingredients:
  • 1/2 cup orange marmalade
  • 1/4 cup Dijon mustard
  • 1 tablespoon olive or vegetable oil
  • 1 pork tenderloin (3/4 to 1 pound)
  • 1 loaf (1 pound) French bread, cut into thin slices
  • Lettuce leaves
Instructions:
  • Prepare your grill for direct heat cooking. Combine marmalade and 1 tablespoon of mustard in a small bowl.
  • Coat pork with oil. Grill covered over medium heat for 15-20 minutes, turning occasionally until pork is slightly pink in the center and a thermometer reads 160°F. Brush with 1 tablespoon marmalade mixture during last few minutes of grilling.
  • Spread the remaining 3 tablespoons of mustard on one side of the bread slices. Thinly slice the pork. On half of the bread slices, layer lettuce and pork. Heat the remaining marmalade mixture until boiling, then drizzle it over the pork. Cover with the remaining bread slices.
