Grill flavorful garlic herb potato wedges directly on your gas grill for easy and delicious results.
Ingredients:
  • 0.25 cup olive oil
  • 1 large clove garlic, peeled and crushed
  • 2 tablespoons chopped fresh rosemary, or more to taste
  • 2 tablespoons chopped fresh thyme, or more to taste
  • 4 Idaho potatoes, each cut into 8 wedges
  • 1 teaspoon garlic salt
  • freshly ground black pepper to taste
Instructions:
  • In a covered container, mix together olive oil, crushed garlic, chopped rosemary, and chopped thyme; allow to marinate for at least 2 hours.
  • Fire up your outdoor grill until it reaches medium-high heat and give the grate a light coating of oil.
  • Place potatoes in a generously sized saucepan and cover with salted water. Bring to a boil and cook over medium-high heat until mostly tender, about 8 to 9 minutes. Drain the potatoes and transfer to a bowl.
  • Strain out the garlic from the olive oil mixture and discard it. Drizzle the garlic-infused oil over the potatoes, season with garlic salt and black pepper, then mix well to ensure the potatoes are evenly coated.
  • Grill potatoes skin-side down over direct heat for 10 minutes, then move to indirect heat and continue grilling for 5 to 10 minutes until fully cooked. Transfer to a serving bowl and generously drizzle with the remaining oil.
