Grilled herb-seasoned mixed potatoes for an effortless side dish.
Ingredients:
  • 4 small unpeeled red potatoes, cut into fourths (about 1 1/2 cups)
  • 2 medium unpeeled russet potatoes, cut into 1-inch chunks (about 2 cups)
  • 2 tablespoons firm butter or margarine
  • 1/2 teaspoon dried sage leaves
  • 1/2 teaspoon paprika
  • 1/2 teaspoon seasoned salt
  • 2 tablespoons chopped fresh chives
Instructions:
  • Preheat your grill for direct heat. Take a 18x12-inch piece of heavy-duty foil and coat it with cooking spray. Arrange potatoes on the foil. Cut butter into small pieces and scatter over the potatoes. Sprinkle with sage, paprika, and seasoned salt.
  • Wrap the foil tightly around the potatoes, leaving space on the sides for air to circulate and the potatoes to expand.
  • Grill the foil packet over medium heat for 40 to 50 minutes, rotating halfway through, until the potatoes are tender. Open the packet by cutting an X on top and sprinkle with chives before serving.
