Guinness lamb shanks

Braise lamb shanks until tender, infused with rich flavors. Elevate with mint oil and spring onions for a vibrant finish that truly enhances the dish.
Ingredients:
  • 3 red onions
  • 2 handfuls of raisins
  • 3 heaped tablespoons thick-cut marmalade
  • 1 heaped tablespoon tomato ketchup
  • 2 tablespoons Worcestershire sauce, plus extra for serving
  • 200 ml Guinness or smooth dark ale
  • 6 x 350g quality lamb shanks
  • 8 sprigs of fresh rosemary
  • 1 litre organic chicken stock
  • 1 bunch of fresh mint
  • a few tablespoons rapeseed or olive oil
  • 2 spring onions
  • cider vinegar
Instructions:
  • Peel and finely chop the onions, then sauté them in a large casserole pan with olive oil, salt, and pepper until caramelized. Stir in raisins, marmalade, ketchup, Worcestershire sauce, and booze. Simmer gently. In a separate pan, brown lamb shanks with rosemary until crispy. Transfer shanks to the casserole pan with onions. Pour in juices. Add stock, cover, and simmer for 3 hours until meat is tender, turning halfway. Transfer shanks to a platter. Blend gravy until smooth and thicken on the stove. Make mint oil and spring onion salad. Adjust sauce with vinegar and Worcestershire. Serve shanks with sauce, topped with spring onions, mint leaves, and mint oil. Enjoy with potato and celeriac mash.
