Gumdrop Cookie Bars

Chewy cookie bars with gumdrops, pecans, and sweet orange icing - a delightful and flavorful dessert.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups packed brown sugar
  • 4 eggs, separated
  • 2 tablespoons water
  • 1 cup assorted colors small gumdrops, chopped
  • 1 cup chopped pecans
  • 2 cups powdered sugar
  • 1/4 cup butter or margarine, melted
  • 2 teaspoons grated orange peel
  • 1/4 cup orange juice
Instructions:
  • Preheat the oven to 350°F and generously coat a 15x10x1-inch pan with cooking spray.
  • Combine flour, cinnamon, and salt in a medium bowl; set aside. In a large bowl, whisk together brown sugar and egg yolks until smooth. Slowly incorporate two-thirds of the flour mixture and water into the egg mixture, alternating between the two, stirring well each time. Toss gumdrops and pecans in the remaining flour mixture until coated; set aside.
  • In a small bowl, whip the egg whites with an electric mixer until stiff peaks form. Gently fold them into the batter along with the reserved gumdrop mixture. Spread the batter evenly in the pan.
  • Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan on a cooling rack.
  • In a medium bowl, whip together powdered sugar, melted butter, orange peel, and orange juice until smooth. Spread the mixture over the bars and allow it to set. Cut into 8 rows by 6 rows.
