Try these upgraded Gumdrop Cookies for a nostalgic and flavorful treat that guarantees a perfect sugar cookie with just the right amount of spice drops every time.
Ingredients:
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla
  • 1 1/2 cups quartered green, red and white spice-flavored gumdrops
  • 2 tablespoons coarse white sparkling sugar
Instructions:
  • Preheat oven to 350°F. Combine flour, baking powder, baking soda, and salt in a medium bowl; set aside.
  • In a large bowl, cream together softened butter and granulated sugar until fluffy using an electric mixer. Add the egg and beat until smooth, then mix in the vanilla. Gradually blend in the flour mixture on low speed until fully combined. Fold in 3/4 cup of quartered gumdrops.
  • Roll dough into 60 (1-inch) balls, then space them 2 inches apart on ungreased cookie sheets. Gently flatten each ball into a 1 1/2-inch circle. Sprinkle sparkling sugar over each circle of dough and top with 3 quartered gumdrops.
  • Bake for 9 to 11 minutes until edges are set and light brown. Allow to cool for 2 minutes, then transfer from cookie sheet to cooling rack. Let cool completely for about 20 minutes before storing in an airtight container.
