Spooky Poppyseed Shortbread Cookies for a chilling Halloween treat.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 teaspoon poppy seeds
  • 1 teaspoon baking powder
  • 0.125 teaspoon salt
  • 0.5 cup butter, at room temperature
  • 0.5 cup white sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon whiskey
  • 1 tablespoon fruit jam
  • 30 almond slices
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • Combine flour, poppy seeds, baking powder, and salt, then whisk them together in a bowl.
  • In a stand mixer, whip butter and sugar until fluffy, for 3-5 minutes. Mix in vanilla extract and whiskey. Stir in the flour mixture until dough is just combined and crumbly.
  • Allow the dough to firm up in the refrigerator for approximately 10 minutes.
  • Divide the dough into 4 equal portions. Roll one portion into a tube on a floured work surface and cut into 1-inch pieces. Place them on a prepared baking sheet. Repeat this process with the remaining dough. Flatten the pieces of dough to about 2 inches in length and 3/4 inch in width.
  • Gently indent one end of the dough pieces with the flat side of a butter knife, then add a dollop of jam. Sprinkle almond slivers over the jam, then carefully make two sets of slits with a knife to resemble knuckles.
  • Bake in the preheated oven until golden, around 7 minutes. Allow to cool for 10 minutes, then transfer to a wire rack to finish cooking, about 20 minutes.
