Protein-packed, crunchy breakfast quesadillas.
Ingredients:
  • 8 large eggs
  • 1 tablespoon water
  • 0.5 teaspoon pepper
  • 3 tablespoons butter, softened, divided
  • 6 (8 inch) whole wheat tortillas
  • 2 cups shredded Cheddar cheese
  • 1 (8 ounce) package Smithfield® Cubed Ham
Instructions:
  • Combine eggs, water, salt, and pepper in a bowl, whisk until perfectly blended.
  • In a nonstick skillet over medium heat, melt 1 tablespoon of butter. Stir frequently and cook the eggs until scrambled to your liking. Place in a bowl and set aside.
  • Spread a teaspoon of butter on a tortilla and place it butter-side down in a skillet over medium heat. Sprinkle the whole tortilla with 1/3 cup of cheese. Add scrambled eggs and ham on one half. Cook until cheese melts, approximately 3 minutes. Fold the cheese side over the egg and ham filling, then flip the quesadilla. Toast until golden, about 2 more minutes. Cut into 2 or 3 pieces. Repeat to make 5 more quesadillas.
