Delicious ham and cheese pinwheels make a perfect kid-friendly lunch option.
Ingredients:
  • 30g butter
  • 20.00 gm caster sugar
  • 120g cheddar cheese
  • 6 eggs, beaten
  • 180ml milk
  • 300g self-raising flour
  • 175g shaved ham, cut into thin strips
  • 70g tomato paste
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced and generously oil a 19cm x 29cm slice pan.
  • Scramble egg in a medium frying pan with oil over gentle heat, stirring continuously until cooked.
  • In a medium bowl, delicately sift together the flour and sugar. Gently incorporate the butter until the mixture resembles breadcrumbs. Add milk and combine until a soft, sticky dough forms. Lightly knead the dough on a floured surface before rolling it out to a 30cm x 40cm size.
  • Evenly coat dough with rich tomato paste, layer on savory ham, add a cracked egg on top, and finish with a generous sprinkle of cheese.
  • Roll the dough into a tight sausage shape, trim the ends, then slice into 12 pieces. Arrange them in a single layer in the pan and bake for 30 minutes until puffy and golden. Serve the pinwheels warm.
